Spicy Edamame Cilantro Hummus
Ingredients
- 1 ½ cup edamame (shelled and thawed)
- ¾ cup cilantro (packed leaves and stems)
- ¼ cup olive oil
- 3 teaspoons tahini paste
- 2 Tbsp fresh squeezed lemon juice
- 3 Tbsp water
- 2 cloves garlic
- 1 tsp cumin
- ½ jalapeno (seeded unless you want it extra spicy)
- ¼ tsp black pepper
- pinch of salt
- Optional: Extra Cilantro for Garnish
Instructions
- Add the edamame, cilantro, jalapeno, olive oil, tahini paste and lemon juice to your food processor fitted with a blade attachment. Blend until smooth. (about 2 minutes) Add in water, garlic, cumin and salt and pulse until smooth.
Notes
I love the mix in the flavor of the edamame, cilantro and jalapeno. This makes for a nice blend of a spicy and slightly sweeter hummus. If you want to up the spice level, add some of the jalapeno seeds to the food processor mix. The cumin is added to bring out the earthy flavors of these ingredients. This hummus is an excellent dip for vegetables, crackers and chips. It is very good on sandwiches and wraps.
Garnish: Fresh Cilantro or Pickled Jalapenos
