Pumpkin Pie Bites

Pumpkin Pie Bites

Yield: 26-27 bites

Pumpkin Pie Bites

Can be stored in an air tight bag for up to 1 week in refrigerator and frozen for up to 3 weeks.


  • 3/4 cup pumpkin puree
  • 1/3 cup agave nectar
  • 1 1/3 cup old fashioned oats
  • 1 1/3 cup puffed rice cereal
  • 1/4 cup unsweetened coconut flakes
  • 1 Tbsp Chia seeds
  • 1/2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice


  1. Add pumpkin puree, agave nectar, oats, puffed rice cereal, coconut and Chia seeds to your food processor and puree all ingredients until a ball of dough comes together. You may need to stop and scrap the sides with a spatula. Then add in the vanilla and pumpkin pie spice and pulse to incorporate.
  2. Remove dough from food processor and place into a bowl. Chill in refrigerator for 10 minutes.
  3. Form dough into balls between hands about 1" round. I use a 1" cookie dough spoon, which works great in keeping the size of the balls consistent. I also use rubber gloves to keep the sticky pumpkin pie dough free from my hands. It also helps make a smoother more consistent ball form.
  4. If none of them are eaten during the process you should end up with somewhere around 26-27 Pumpkin Pie Bites.
  5. If you share my love for pumpkin pie spice, I highly suggest sprinkling extra pumpkin pie spice over these finished beauties before eating.
