Lemon Coconut Bites
These lemon coconut bites are a combination of tart and sweet packed into a healthy bite-sized treat. Lemon Coconut bites are a much healthier version of one of my favorite desserts, lemon bars. These little bite sized balls are quickly becoming my favorite spring time treat.
Ingredients
- 1 cup packed pitted dates
- 1 ¼ cup old fashioned rolled oats
- ½ cup unsweetened finely shredded coconut (an extra 3 Tbsp is needed for coating the bites)
- 1 Tablespoon chia seeds
- 2 Tablespoons hemp seeds
- Zest from 1 lemon
- 2 Tablespoons fresh squeezed lemon juice (juice of 1 lemon)
- 1 Tablespoon water
- 1 teaspoon pure vanilla extract
- ¼ teaspoon ground ginger
Instructions
- Add all the ingredients to the bowl of a food processor fitted with a blade attachment.
- Process until all the ingredients are well incorporated and take on a dough-like consistency. You will know the mixture is done when the ‘dough’ starts to form into a ball in the food processor.
- Pour a little shredded coconut (approximately 3-4Tablespoons) into a separate bowl or plate and set next to the dough bowl. Now you are all set up and ready to begin rolling and coating your bites into coconut covered balls.
- With damp hands (I dip my hands into a small bowl of water before rolling as this helps pack the balls tightly and also allows the finely shredded coconut to stick onto the balls), roll a tablespoon-sized amount of the mixture into balls. Tip: I use a small cookie dough scoop to form consistent ball sizes and then finish them by hand rolling.
- Roll each bite in the coconut, using your hands to help press the coconut into the surface.
- Store bites in an airtight container in the refrigerator for up to 1 week, or in the freezer for up to 3 months.
