Dirty Martini Hummus
I love the smooth and creamy texture of the cannellini beans and the flavor of the chick peas (garbanzo beans). This hummus is an excellent dip for vegetables, crackers and chips. It is very good on sandwiches and wraps. Could even be smeared on toast for a nice warmed in the oven olive hummus ‘tapenade’ dip.
Serving Suggestion: Serve in a martini glass with sliced olives for garnish.
Ingredients
- 1 15.5oz can chick peas
- 1 15.5 oz can cannellini beans
- 2 teaspoons tahini paste
- 2 Tbsp fresh squeezed lemon juice
- 4 Tbsp extra virgin olive oil
- 1 cup whole pitted black olives
- 1/4 cup whole pitted green olives (I used double stuffed with jalapeno and garlic)
- 1 Tbsp of the reserved black olive juice brine
- (If olives are not stuffed with garlic than add 1 clove of garlic to this recipe)
Instructions
- Rinse and drain both the chick peas and cannellini beans and add to food processor along with the tahini paste, lemon juice and olive oil. (If you need to add in garlic, do so now) Blend until smooth. Add in black olives, green olives and reserved black olive brine and pulse until smooth.
