Cocoa Brownie Squares
These decadent raw cocoa brownie squares are incredibly delicious and addicting! If you love brownies, then you will love indulging in these chocolatey bars of bliss that are actually healthy. These cocoa brownie squares won’t leave you with the sugar crash or feeling guilty like old fashioned browines, as these squares are packed with natural ingredients, sugars, fiber and energy.
Ingredients
- 1 cup chopped walnuts
- 1 cup packed pitted dates
- 1 ½ tsp. vanilla extract
- ¼ cup cocoa powder
Instructions
- Combine all the ingredients into your food processor bowl fitted with a blade attachment and process for about 2 minutes until the mixture is finely combined and looks oily. The mixture almost looks like a deep black soil at this point.
- Remove the mixture from the food processor and press into a small 4 x 8” bread pan. Take care to really pack the brownie tightly as this helps the brownie keep its shape once cut. Pop the mixture into the refrigerator for 30 minutes to chill and firm up the brownie mixture for cutting.
- With a sharp knife cut the Cocoa Brownies into 8 square (2x2") pieces. If you want to top your Cocoa Brownies I suggest raw walnut pieces or even a pinch of sea salt.
- You can store Cocoa Brownies in an airtight container in the refrigerator for up to 2 weeks. And in the freezer for up to 2 months.
Molly, these brownies are a game changer for me, and I can’t wait to make them with my daughter! How can I incorporate cocoa nibs into this recipe (I think you included those in the recent batch you gave me)? DELICIOUS!
Lisa, I am so happy you enjoy the brownies! To incorporate the cacao nibs, first grind up the nibs into a very fine powder in your food processor. Then add the rest of the ingredients and follow the same directions in this post.
•1/3 cup cacao nibs
•1/3 cocoa powder
• 1 cup raw chopped walnuts
• 1 cup packed pitted dates
• 1 1/2 tsp. vanilla extract
