
Cheating Pickling Reuse
Need a simple idea for pickling your own vegetables?
The next time you have a jar of pickles or pickled vegetables, don’t throw it out. Save the contents in the jar. You can reuse the pickling liquid and spices. Once the jar is emptied of pickles, remove the lid. Place jar in microwave to heat up for 1-2 minutes.
Cut up whatever hearty vegetables you would like to pickle. I cut up whatever I had on hand in my refrigerator that day. Cucumbers, white and red onions, celery and carrots.
Fill up your jars with an assortment of vegetables and pour the warm pickling mixture over top until full.
Place jar in the refrigerator for at least 2 days. After the first 48 hours, these vegetable are delicious pickled vegetables. I use them on sandwiches, salads and even as a snack. I only recommended reusing your pickling liquid once. After this use, I will strain and put the seeds in the compost pile.
